The appliance business is not what it used to be. Any number of retailers have tested or added appliances, from Zellers to Home Depot to Lowe's. In some cases, this has meant standard appliances, in others it has meant a limited assortment, such as air conditioners.

But there's another side to the appliance story. With the proliferation of non-traditional appliances, such as countertop freezers and mini refrigerators from rising stars like Haier, consumers are quickly warming to the virtues of small, well-built machines instead of the conventional wisdom that bigger is better. Building on this shift in the consumer mindset, Haier recently launched a countertop clothes washer (pictured) using its proprietary new "Hand Wash System," a gentle-wash cycle intended to replicate the delicate qualities of old-fashioned hand washing.

Above and beyond: ordinary appliances get smart

Motorized blinds, choreographed home theaters, whole-house lighting displays... Such are the premium lifestyle amenities we've come to associate with the connected home. Proprietary high-end communications networks from Crestron, AMX, Elan Home Systems, and Vantage Controls have been pampering the luxury homeowner for years, managing everything from lighting to music to security systems via slick keypads or touchscreen panels.

But try to have the system integrator program the microwave oven or the clock radio into the equation, and it's far more trouble--and programming cost--than it's worth. The everyday household appliance has largely been left out of the connected home picture.

That's changing, and the Internet is the enabler. Using standard household wiring and the simple programming powers of the PC, Salton is bringing to market a line of appliances that can tap the powers of the Internet and a home network to bring smart capabilities to everyday appliances.

Salton already sources the Icebox, a high-end entertainment center for the kitchen combining a flat-screen LCD TV, DVD player, radio, and Web browser. Icebox has a video input for a camera to keep tabs on the baby's room or the front door from the kitchen TV. The system comes with a wash-keyboard and a mounting rack that enables the screen to tuck beneath cabinets when not in use. The upscale TV system is sold by systems integrators.

Beyond is the next stage in Salton's vision for the connected home, and it moves the notion of networking to the mainstream. The company's portfolio of brands covers popular names including Toastmaster, George Foreman, Melitta, and Westinghouse, and the latter will carry the additional Beyond logo when four Westinghouse Beyond products ship this summer. The appliances incorporate EasyPlug, a networking technology that uses standard AC wiring to carry voice and data as well as power.

Beyond products communicate with a souped-up clock radio called Home Hub that does double duty as control center of the appliance network. In networking jargon, Home Hub is a residential gateway, although the oval-shaped radio resides on the night table next to the master bed rather than in a utility closet in the basement. The Home Hub communicates with other Beyond devices in the home over the power line and taps into the Internet for simple PC-based programming. The only visual clues that the 8-inch-tall Home Hub isn't a conventional clock radio are the display and the RJ-45 and RJ-11 phone jacks on the back. The system works with dial-up and broadband connections.

Salton's vision is that the Beyond line will change how homeowners use everyday appliances, according to Robert Lamson, senior vice president of Beyond products. The product concept is practical rather than glitzy. "We're not trying to change people's lives," he says. "So many high-tech products fail because they're trying to change people's behavior, or their developers don't understand the value proposition. Our idea is to let people live the same way but better."

Better might include waking up to your favorite CD track before you transition to morning news. You can do that now with a complicated CD radio but you probably can't program it without the owner's manual. With Beyond, you program the clock radio on the Beyond Web site using point-and-click menus that guide you through the process. You can pick one CD track number for Wednesday's alarm, and select a different track for Thursday. Or, you can choose different radio stations for you and your spouse at different times of the morning.

Beyond takes the clock radio well beyond the wake-up call, though. It becomes your first source of information in the morning for personalized news that you've selected to see on the hub's 11-line display, which is about the size of a large personal digital assistant (PDA). When you set up your account you plug in your ZIP code, which determines the weather forecast and local news you receive. The Web site also lists radio stations in your area, making programming almost as simple as clicking on familiar call letters. From the Web site you choose the information that's important to you, such as news headlines, sports scores, weather, and your stock portfolio. Since the Beyond line is built on the Windows CE.Net operating system, the Home Hub will soon also be able to synchronize with Outlook, allowing you to bring up the day's schedule and to-do list, too.

During the middle of the night Home Hub makes a local phone call to Beyond's smart server, identifies itself and gets updated information. It also syncs itself with the U.S. Naval Observatory Atomic Clock in Colorado so that it always has the correct time.

The other Beyond products making their debut this summer include a Westinghouse Beyond-branded microwave oven, bread machine, and coffee maker. When you plug them in, they identify themselves to the Home Hub and are automatically added to the network. Their clocks automatically synchronize with the Home Hub clock. When it's time to jump ahead for daylight-saving time, all appliances on the network set themselves.

It's Faster Than The Speed Of Gas - And More Economical, Too

The art of induction cooking might have appeared to have been lost, but as gas and electric hobs begin to find their grips on the market loosened, induction hobs have appeared as the catalyst of this slip.

Cooking purists will always hold gas hobs very close to their hearts, and it is unlikely that any other hob will ever change that easily. The traditional method of heating up a pan and cooking with it is simple, especially with the high degree of control over the heat available to the chef. Induction hobs are also said to be considerably more energy efficient than gas hobs, using up to 90% of the energy produced in comparison to 55%, making them more economical. This could well be something of a false economy, seeing as the equipment required to use it is more expensive. However, as induction cooking becomes increasingly mainstream, the prices will tumble in accordance. Market experts believe that it is only a matter of time before induction hobs will begin to challenge gas hobs for market share, and over the next 5 years they expect induction hobs to double or even treble their 5-7% of the market. Just like the DVD replaced the VHS cassette, induction hobs look set to overtake and replace their gas counterparts.

As we saw with DVDs, the induction equipment is expensive in comparison to gas. In addition, regular pots and pans will not work on induction hobs. Pans made from a ferrous metal are required, in order to pass through the electro magnetic currents created by the induction hobs. Once the ferrous pan is in contact with the induction hob, heat is generated in the pan, rather than from the hob. The temperature can be controlled by adjusting the electric currents from the hob. All of this means that the hob itself won’t heat up, it will only be the pan so there are safety advantages to be had too. Do not be put off by the fact that ferrous pans are required – it just means that your pots and pans will need to be made from steel or iron, rather than traditional Pyrex or aluminium. The required equipment is readily available from both the high street and from online stores, and there are different levels of quality with a wide range of prices to suit.

The hobs themselves are also more expensive than both the traditional gas hob and standard electrical ones. However, the technology involved in using them to cook is one of the reasons why. As previously stated, the hobs themselves don’t heat up; they simply provide a source for the pan to heat up. Beneath the ceramic surface lies sophisticated set of electronics that make up the element, which in turn power a coil to produce a high frequency electromagnetic field. This action does not generate heat, but it is the circulating electric current that occurs when a ferrous object comes in to contact with it that does. As a result, even though the ferrous object will invariably transfer some heat to the cook top, it is by no means hot enough to burn, and will very quickly return to normal temperature. Temperature control during cooking is also as good as instantaneous, as it is simply a case of altering the electric current.

The future of induction hobs looks pretty secure, and could become even more readily available. Currently, German manufacturers such as AEG, Bosch and Siemens are the dominant forces in the induction hob market, and Smeg are also big players. Japanese companies are also beginning to develop induction technology that can be used with standard pots and pans, although this is probably a few years away yet, but the general consensus is that induction hobs will fall in price, and will then be much more accessible to all. The benefits of induction cooking will also become more apparent as its popularity increases with the public.

In terms of maintenance, induction hobs are much easier to clean than gas hobs. Because the heat only occurs with the pan, it means that spillages do not get baked on top. It’s also a continuous surface, so there are no obstacles to clean around. There’s no energy wastage either, as the electromagnetic field transfers its energy directly to the pan. The hobs also begin to cool down as soon as the pan is taken away, meaning that they are very safe to touch. In comparison to gas, there are no emissions, and hence no fears about any gas leaks.

Gas hobs are still very much the choice of the majority of people, but it seems that it is only a matter of time before induction equivalents will be looked upon as a serious everyday alternative to the traditional option. The evidence of the benefits are there to be seen, but change won’t happen quickly. As induction hobs gain more popularity, prices will fall, and perhaps they will become the norm. With the environment becoming a bigger issue and people’s lifestyles getting even busier, induction hobs could even be promoted by more advocates sooner rather than later.
